Shakshukha

Shakshukha recipe

Ingredients
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 4 Tomatoes , chopped
  • 1 red bell Pepper, sliced
  • 2 Garlic, crushed
  • 1/2 tsp paprika/ Chilli powder
  • Salt to taste
  • 4 Eggs
  • 1 tsp black pepper
  • Basil and Coriander for garnish

Instructions

  1. Heat oil in a wok and add minced garlic and onion and saute.
  2. Now add peppers and fry till soft.
  3. Add chopped tomatoes along with cumin powder, Chilli powder, and salt.
  4. Fry till tomatoes get mushy and cooked.
  5. Meanwhile take 3-4 eggs, break them on the tomato sauce at equal distance.
  6. Cook the poached eggs for 10-15 mins, with the lid closed.
  7. Turn off the gas. Garnish the shakshuka with pepper powder, few basil leaves and chopped coriander.
  8. Serve with love!

Chocolate Cake

Chocolate Cake recipe

  1. Preheat your oven to 350 degrees F.
  2. Spray two 9-inch round cake pans with baking spray and line the bottom with parchment paper.
  3. Whisk all the wet ingredients together either by using a hand held or stand mixer:
  • 2 cups sugar
  • 1 cup buttermilk
  • 2/3 cup vegetable oil
  • 1 cup water + 1 tsp instant espresso powder
  • 2 eggs
  • ½ tsp vanilla extract
  1. Sift and combine the dry ingredients together:
  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¾ cup unsweetened cocoa powder
  1. Combine wet and dry ingredients but do not over mix.
  2. Divide the cake batter equally between the two cake pans and bake in the pre heated oven for 35 mins or until a toothpick inserted in the middle of the cake comes out clean.
  3. Cool the cakes out of the oven for about an hour during which the chocolate whipped cream filling can be made (recipe listed below).
  4. Place one cake layer on a cake board or a serving plate, spread an even layer of filling on it and then place the second layer on top. Add more filling on the top and the sides and cover the cake.
  5. Optional – Decorate with chocolate shavings or chocolate chips on top and a simple border using 1M Wilton decorating tip
  6. Time to indulge in the decadent cake!! Refrigerate the remaining cake (if any left ;)).

Chocolate Whipped Cream Filling

  1. Add 2 cups of heavy whipping cream to a mixing bowl.
  2. Combine 1 teaspoon vanilla extract, 6 -8 tablespoons of sugar (adjust based on your sweetness preferences), 4 tablespoons of cocoa powder and 4 tablespoons of heavy whipping cream (from the 2 cups that was added to the mixing bowl earlier)
  3. Add the above mixture to the heavy whipping cream and beat until just stiff peaks using a whisk attachment or a hand held mixer
  4. Cover and refrigerate if not using immediately.

Guacamole chicken cheese dosa

Ingredients:

  • Dosa batter
  • Guacamole (Avocado, peppers, onions, salt, chili flakes)
  • Grilled chicken

Recipe:

  • Spread dosa batter on the pan
  • Add little oil or ghee
  • Spread guacamole on dosa
  • Add grilled chicken
  • Sprinkle cheese
  • Let it cook for a minute.
  • When you see the cheese melting remove dosa from the pan and serve.

You can either serve it as a pizza cutting into pieces or make a roll and cut dosa into pieces and serve with pickle.

Guacamole

Recipe :

  • Take ripe avocado 🥑 and cut it half lengthwise, twist open remove the seed and scoop out the flesh and mash it
  • Add lime juice
  • Add chopped onions, peppers, cilantro, tomatoes (I don’t add tomatoes but you can add if you like)
  • Add little salt, pepper, garlic, cumin powder (you can add any seasoning you like)
  • Mix everything well and it’s ready to serve

You can serve it with tortillas, use it as a spread on a toast or dosa.

Chicken casserole

Recipe :

  • Take a baking dish and add onions, peppers, broccoli (any veggies you like)
  • Sprinkle salt, black pepper, garlic powder, chili flakes (add any seasoning you like on the veggies)
  • Add grilled chicken (optional) vegetarians can skip this step
  • Add a layer of french bread
  • Add pizza sauce on the bread (I added green chili sauce)
  • Sprinkle cheese on top
  • In another bowl beat eggs until frothy, add little milk, cilantro, salt, black pepper, chilies and beat everything together
  • Add the egg mixture on top of the cheese in the baking dish
  • Put the dish in the oven for 30 minutes and let it cook
  • You can tell if it’s cooked when a knife or a toothpick inserted in the center comes out clean
  • Remove and serve

Asparagus

Recipe:

  • Cut asparagus in half (convenient size to eat). You can snap off the woody root ends
  • Add extra virgin olive oil into the pan
  • Add freshly chopped garlic, add black pepper, little salt to taste
  • Add chopped asparagus and mix everything together and let it cook for 2-3 minutes
  • If you like asparagus soft, you can add some water to the mixture and let it cook for another minute
  • Remove and serve

Oreo red velvet milkshake

Recipe :

  • Add vanilla or any flavor ice cream in a mixing jar
  • Add Oreo biscuits (I used red velvet) you can pick any flavor you like
  • Add milk (low fat or whole milk)
  • mix well and serve

Quinoa salad 🥗

Quinoa salad recipe 🥗

Ingredients:

  • Quinoa
  • Chickpeas (good source of protein)
  • Lemon 🍋
  • Olive oil
  • Parsley leaves
  • Mint leaves
  • Cucumber
  • Feta cheese
  • Tomatoes
  • Scallions
  • Garlic

Recipe:

  • Add 2 cups of water to a cup of quinoa (similar to cooking rice) and let it cook. You can say it is cooked when you see a little white germ pops out and makes a circles the seed and quinoa become light translucent consistency
  • Add fresh chopped mint and parsley leaves to the quinoa
  • Add tomatoes (cherry tomatoes), cucumber, scallions, cooked chickpeas (soak beans for 2 hours in water and steam cook in pressure cooker)
  • Add fresh feta cheese
  • Salad dressing – take a bowl and squeeze half a lemon juice in it, add freshly chopped garlic, oil olive, enough salt, black pepper and mix it well (lemon vinaigrette)
  • Drizzle the salad dressing on the quinoa and toss everything together and serve

Quinoa grilled chicken saute

Quinoa grilled chicken saute recipe

Recipe :

  • Cook quinoa (similar to cooking rice) you can cook with vegetable or chicken broth for added flavor
  • Take a wok, add oil, garlic, green chilli’s, any veggies you like (peppers, broccoli, onions), add little salt and let them cook for few minutes
  • Add oyster sauce, chilli garlic sauce, little soy sauce and mix well (you can also use fish sauce instead of oyster sauce)
  • Add scrambled eggs and grilled chicken to the mixture
  • Add quinoa and mix everything together and let it cook for a minute or two and it’s good to serve!

Soya saute

Soya saute recipe

Recipe :

  • Take a pan add oil, clove, cinnamon, cardamom
  • Add chopped onions, let them cook till they turn into golden brown color
  • Add turmeric, salt, chilli powder, garam masala powder and mix everything together and let it cook
  • Use a mixer to break soya chunks into small pieces and soak them in water for about 2 mins
  • Squeeze out water from soaked soya (soya gets softer) and add to the onion mixture
  • Mix everything together and let it cook for 2 minutes on medium flame
  • Remove and serve

This was one of my favorite dishes my mom made when I turned into a vegetarian for a year.

Stuffed peppers

Stuffed peppers recipe :

For the filling –

  • Heat some oil in a frying pan, add onions, finely chopped garlic, chilli’s, deseeded tomatoes, boiled potatoes, panner / grilled chicken or tofu, olives

For the seasoning –

  • Add salt, chilli powder, red chilli sauce or pizza sauce, bit of sugar, dried oregano, coriander leaves
  • Mix everything together (filling is ready let it cool down for 5 minutes)
  • Chop medium size capsicum of any color into half and deseed
  • Add mozzarella in the filling and mix well
  • Now fill the filling in the capsicum cups
  • Garnish with little mozzarella and bake them for 10-15 minutes at 180° Celsius
  • Remove and serve

Boneless chicken curry

Quick & easy boneless chicken curry recipe:

  • Add oil into the pan
  • Add cinnamon, cardamom, clove, dried red chilli (spices) into the pan, wait till they splutter
  • Add chopped onions and chilli, let them cook till onions turn into golden brown color
  • Add ginger garlic paste, let it cook for a minute
  • Add salt, turmeric, red chilli powder and garam masala. let the mixture cook for 2 minutes
  • Add chicken, mix everything together and put the lid on and let it cook till the chicken gets softer
  • Add coriander leaves and it’s good to serve.

Tomato chutney

Tomato chutney recipe :

  • Add oil in the pan
  • Add cumin seeds, smashed garlic, dieced tomatoes, salt, green chillies, turmeric powder.
  • Mix well and let the mixture cook for few minutes
  • Add little tamarind & a pinch of sugar
  • Add coriander to the mixture and keep everything aside till the mixture cools down
  • Grind the mixture in a mixer

For the tempering :

  • Take a pan add oil, mustard seeds, dried red chilli, urad dal, channa dal, smashed garlic
  • Wait until they splutter
  • Add the tempering to the grinded tomatoe mixture
  • Tomato chutney is ready to serve

Serves well with dosa.

Demon’s paratha

Demon’s paratha recipe

Step : 1

  • Mix chapati flour, make a dough out of it (flour, little oil, water) and set aside

Step : 2

Stuffing :

  • Take a bowl, add mozzerella cheese, chopped peppers, onions, finely chopped coriander & mint leaves, spring onions, any vegetables you like, grilled chicken (vegetarians can add tofu or panner)

Seasoning :

  • Add salt, chilli powder, little garam masala powder and chat masala
  • Mix everything well and add cooked quinoa to the mixture and mix well again

Step : 3

  • Divide the dough into equal portions.
  • Take one portion of the dough and roll it out into a thick disk (easier to stuff it with the mixture if the disk is thick)
  • Place the mixture in the center, gather the edges seal it properly and roll out again
  • Make sure it’s not rolled out too thin

Step : 4

  • Cook the paratha on hot tawa on medium heat till each side is cooked, you can drizzle some ghee or oil if you like
  • Remove put them on a serving plate and it’s ready to eat.

You can serve paratha with yogurt or raita.

Boondi raita

Boondi raita recipe

  • Whisk the yogurt in a bowl (you can add water for a thinner consistency)
  • Soak boondi in warm water and let it stand for 10 minutes, if you like it crunchy you can put in the boondi directly
  • To the yogurt – add salt, (sugar if you like), red chili powder, cumin powder, amchoor powder, chat masala, black pepper, mint leaves, coriander leaves
  • Mix everything well and keep it aside
  • Drain the excess water, with the help of your hand squeeze the excess water from the boondi and add it to the yogurt mixture and mix well
  • Boondi raita is ready to serve

Ginger garlic chicken saute

Ginger garlic chicken saute recipe

  • Take a wok, add oil, add plenty of chopped ginger & garlic, add fresh boneless chicken (vegetarians can add tofu or panner), mix well and add black pepper, very little salt and stir fry for 2-3 minutes
  • When the chicken changes color, add sliced onions, bell peppers, spring onions, carrots, celery (any vegetables you like) let them cook for 2-3 minutes
  • Add fresh chili, soya sauce and mix well and let it cook for 1-2 minutes
  • Dry out if there is any moisture in the mixture and it’s good to serve

Kadai Panner

Kadai Panner recipe

Step 1

  • Take a wok, heat one table spoon of oil
  • Add onions, let them cook till they turn brown
  • Add finely chopped tomato, cook the tomato till its soft
  • Add very little salt to the mixture

Step 2

  • Add the mixture into a mixer
  • Add garam masala powder & raw mango or amchoor powder to the mixture
  • Add little bit of water & grind them into a smooth puree

Step 3

  • In the same wok, Add little butter, Ginger garlic paste, slit chilis, few onion & pepper cubes. Toss everything together and cook for a minute
  • Add the grinded puree into the wok and mix everything together
  • Add water for gravy

Step 4

  • Add panner cubes and toss them with the mixture
  • Add salt
  • Add freshly chopped coriander leaves and kadai panner is ready to serve

Tomato pappu (dal)

Tomato pappu (dal) recipe

Step 1 :

  • Pressure cook toor dal till it gets soft
  • Take a wok add little oil or ghee, add chopped garlic, when garlic turns golden brown color add chopped onions, little salt, add turmeric, add tomatoes, add tamarind paste, chilli powder, mix everything well and let them cook for 2 minitues
  • Add toor dal into the mixture, mix well and let it cook for few minutes. Add some water if you like

Step 2 :

  • Take another pan for tampering, add oil/ghee, add dried chilli, urad dal, mustard seeds, cumin seeds, curry leaves

Step 3 :

  • Add the tampering into the dal mixture and mix well
  • Remove and serve

Chili Potato

Chili potato recipe
Step 1 :
  • Boil potatoes
  • Cut them into small cubes (with or without skin)
  • Add 2 spoons corn flour, 1 spoon all purpose flour, salt, pepper, little oil, 1 egg and mix well with the boiled potato cubes
Step 2 :
  • Take a wok, add oil
  • Add potatoes to the oil and fry them till they turn golden brown color
  • Take them into a bowl and let them cool
Step 3 :
  • In the same wok, add some oil, chopped ginger, chopped garlic, slit chili’s, onion cubes, red & green pepper cubes, little salt, chili garlic sauce mix everything together
  • Add scallions
  • Add fried/ sauteed potatoes to the mixture and cook for 2-3 minutes
Remove and serve.

Goya Spanish flan

Goya Spanish flan recipe

  • Take a pan, add one packet of Goya Spanish flan to three cups of cold whole or 2% milk
  • Turn on the flame, mix the powder instantly as you pour cold milk into the pan slowly so it doesn’t form lumps
  • Keep stirring continuously till the mixture turns into thick but still liquid in consistency (Draw a finger across the back of the spoon and if it leaves a trail, your custard is ready)
  • Let it cool for few minutes (do not leave it for long as it can curdle up)
  • Remove and pour in cups or tray and leave them in refrigerator for few hours.
  • You can decorate it with fruits/ food sprinklers/ cream etc
  • Remove and serve

Custard (similar to flan) can also be prepared directly with ingredients you find in the pantry (milk, eggs & sugar, you can add vanilla or any extract if you need flavor)

Pani Puri

Pani Puri recipe

Puri – Store bought

Pani – Take a bowl full of water, add Pani Puri masala, little chat masala, salt, 1 chilli, mint and coriander paste (grinded), mix everything together

Stuffing – Take cooked channa (I smash some channa in a mixture), add red chilli powder, cumin coriander powder, chat masala, little pani puri masala, coriander leaves, little tamarind and salt (you can add little salt while boiling the channa initially), mix everything together

Assembling – make a gentle hole in the top middle side of the puri, fill in the channa masala mixture, dip it in the pani and it’s ready to eat

Kodi vepudu (chicken fry)

Kodi vepudu (chicken fry) recipe

Ingredients:

  • Coconut Oil – 2 teaspoons
  • Onion – 1 large
  • Green chilies – 2 medium
  • Turmeric powder – 1/4 spoon
  • Ginger garlic paste – 1/2 spoon
  • Salt – to taste
  • Chicken – 0.8 lb
  • Red chili powder – 1/4 spoon
  • Coriander powder – 1/4 spoon
  • Garam masala – 1/4 spoon
  • Coriander leaves – 1/4 bunch
  • Water – 1/4 cup
  • Lemon – 1 number

Method:

  • Heat oil in a pan, add chopped onion, green chilies and saute the mix until the onions start to look golden/ translucent
  • Then add turmeric powder, ginger garlic paste, the first dose of salt, chicken pieces to it and saute it.
  • After a minute, add the second dose of salt, red chili powder along with half cup of water. Cook it at low heat with the lid closed for about 4-5 minutes.
  • Season it with coriander powder, garam masala, and saute it. Let it cook with closed lid for about 2 minutes.
  • At last, garnish with lemon juice, chopped coriander leaves and mix well.
  • The key is to slow cook the dish. Vary the amounts of onion/ chilli depending on how much ‘gravy’ you want in your dish. Voila!

Protein Pancakes

Protein Pancakes 🥞 recipe

Step 1 :

  • Take a blender
  • Add protein powder of your choice and flavor (we used half a cup cookies & cream)
  • Add 2 egg whites
  • Add 2 spoons peanut butter
  • Blend everything together and the batter is ready

Step 2 :

  • Take a frying pan
  • Add ghee/oil of your choice
  • Spread the batter on the pan and let it cook for a minute
  • Flip it and let the other side cook for few seconds

You can do honey for added taste
Remove and serve
